The VP of Food and Beverage, under the direction of the Chief Executive Officer, is responsible for the development and execution of the overall vision of the Food and Beverage programs for all Kewadin Casino Properties.  The position is responsible for the overall supervision and direction of all beverage and food outlets located at all Kewadin Casino Properties.   The position is responsible for supporting the food and beverage directors/managers at each property level by providing analysis of key financials and reports to achieve budgeted revenues and profitability. The VP of Food & Beverage will also be responsible for coaching, counseling and developing the food and beverage team as well as providing attentive, cheerful, courteous and professional service to all customers, internal and external, striving to always exceed their expectations

 

ESSENTIAL FUNCTIONS: (includes, but is not limited to, the following)

 

  • Continually develops, improves and implements core food and beverage operating and service standards.
  • Defines and refines restaurant concepts per outlet, coordinating with marketing, training, and leadership teams to ensure the story of each outlet is communicated consistently to guests.
  • Works closely to analyze trends and prepare critical measurements to drive revenue, reduce costs and ensure competitive advantage in industry and specific markets.
  • Implements food and beverage financial strategies by anticipating requirements, trends and variances; develops budgets and capital expenditure plans.
  • Develops action plans, measures and analyzes results, and takes corrective action in order to minimize the impact of variances and increase profitability.
  • Controls food and beverage supplies by negotiating prices and contracts; developing preferred supplier lists; reviewing and evaluating usage reports; analyzing variances; taking corrective actions to achieve results.
  • Oversee the management of marketing each properties food and beverage outlets, manage the implementation of menu planning and promotions while following branding guidelines.  Analyze market trends and implement strategies to improve patronage.
  • Frequently visits all properties to insure all that all standards are met according to company guidelines.
  • Works closely with all Food and Beverage management to develop and offer guidance for any immediate of forthcoming opportunities and/or challenges.
  • Manage each property approved annual budget, departmental marketing plan, forecasts and objectives to meet/exceed management's expectations.
  • Monitors payroll cost, food and beverage costs, portion control, waste and quality of products.   
  • Conducts performance reviews according to company policy. 
  • Attends necessary meetings and seminars as to stay abreast of industry trends and patterns as well as networking opportunities. 
  • Works jointly with casino management personnel at all casino locations to address areas of concerns and recommendations for improvement.

  • Ensures team member compliance to all company and departmental policies and procedures, rules and regulations.
  • Maintains a high level of customer service.
  • Responsible for the selection, training and development of all food and beverage management team. 
  • Manages, plans and directs activities of all department managers.
  • Ensures a safe work environment for all employees. 
  • Establishes and maintains effective channels of communication with team members and customers.
  • All other job related duties as assigned by the Chief Executive Officer.

PHYSICAL REQUIREMENTS:

 

Position sedentary primarily sitting/lifting maximum of 10 pounds. Physical factors include constant standing, walking, pushing/pulling, use of hearing, smell, near/midrange/far vision, depth perception, color/field of vision; frequent carrying/lifting, stooping, reaching, manual handling, typing, bending; occasional sitting, climbing, kneeling, crawling and travel. Working conditions include constant exposure to noise, air quality; frequent exposure to extreme heat/cold, dimly lit conditions; occasional exposure to weather, wet/humidity and vibration. Potential hazards include constant exposure to moving mechanical parts, electric shock, chemical, computer and equipment use and occasional exposure to high exposed places, insecticides/pesticides.

 

EDUCATION AND EXPERIENCE:

 

Education: Associates Degree in the Hospitality Management or the Food/Culinary Industry or a Bachelor's Degree in Business Managementrequired. 

 

Experience: Minimum of 10 years of food and beverage experience working as a Director/Executive Chef or above in Food or Beverage management required.  Minimum of 15 years of progressive management experience working in the food and beverage industry; multi property preferred. 

 

Certification/License: Sanitation and TIPS Certification required, training will be provided. Must have valid driver's license and comply with the annual review process thereof to meet insurability standards set forth by the Sault Tribe Insurance Department.  Will be required to have a Criminal background investigation done under the rules of the National Indian Gaming Commission. Will be required to complete and pass pre-employment drug testing.

 

Knowledge, Skills and Abilities: Knowledge and understanding of food and beverage operations required. Must be able to communicate effectively, verbally and in writing, in a diverse range of audiences and settings. Must have mathematical and budget skills.  Must be able to prepare clear, concise, thorough, meaningful, and grammatically correct written reports, letters, memoranda, policy and procedural drafts, and other written documents. Must have the ability to interpret and apply policies, procedures and guidelines. Must be able to work extended hours when necessary.  Must be flexible and available to work various shifts, including nights, weekends and holidays. Must have strong leadership skills and team building abilities. Must be able to establish and maintain effective communication with co-workers, subordinates, supervisors and the general public. Must have excellent public relation/customer service skills and be able to exhibit a friendly and positive attitude. Must have knowledge of or ability to learn to use office machines, such as calculator, copier, fax, printer and computer.  Native American preferred.
